Contemporary Dough: Lightness and Character
Our contemporary dough is crafted using the biga and refreshment technique. This long fermentation method gives the pizza a light, airy structure, while the pre-ferment develops a rich and complex flavor with unique aromatic nuances.
Additionally, we use 100% Italian type 1 stone-ground flour sourced from a short and certified supply chain.
The result? A fragrant, easily digestible pizza with an unmistakable taste, able to enhance every ingredient with its soft yet crunchy texture.
The Multigrain Tonda
A dough with very high hydration and a flavorful mix of flours that deliver a unique texture and taste: crispy on the outside and soft on the inside, with the perfect balance of lightness and nutritional value.
Pala Romana: lightness and crispiness
Our dough for Pala Romana is the result of careful high-hydration preparation, giving the pizza a crispy exterior and a soft interior. Its characteristic elongated shape, inspired by Roman tradition, highlights the fragrance and lightness of this dough, perfect for topping with our high-quality ingredients and serving for sharing. A true taste experience.

A blend of a young saison and Spontaneum aged 12 months in oak barrels with our indigenous yeasts. A small amount of must from our Tai Rosso grapes is then added to the blend. Naturally refermented in the bottle.

Rive Bianche

Brewed with barley and wheat malt, it undergoes spontaneous fermentation and matures for 18 months in oak barrels. During this long aging, indigenous yeasts provide a unique organoleptic complexity, with the balanced acidity typical of this traditional production method. At the end of maturation, the must and skins of our Garganega and Incrocio Manzoni grapes are added. The grapes macerate in the beer for 3 months, initiating a new fermentation. Bottled without added yeast, it naturally referments in the bottle.
